Homemade: Easy Peach Blackberry Cobbler
Now that we're officially in the heat of summertime, we felt there was no better time to indulge in a sweet, refreshing berry treat. We asked Marcella Dilonardo, a recipe developer and the blogger behind Modest Marce to share her favorite cobbler recipe. Inspired by simple, rustic living, Marcella's recipes are created using minimal ingredients and are always focused on what's currently in season. What can we say: Ripe, fresh berries topped with a crumble crust and served with a heap of ice cream feels oh-so-right for these midsummer months.
"There is nothing i love more then a fresh summer cobbler made with the sweetest fruits summer has to offer! Last year we planted a blackberry bush, but didn't think it was going to take as we don't exactly have a green thumb. To our surprise, we were wrong! This year the blackberry bush has tripled in size & produced just enough fresh blackberries to snack on & bake with as we pleased. So today, i am celebrating our green thumb milestone with a homemade peach & blackberry cobbler! This dessert is so simple to make & the vibrant colors are absolutely gorgeous - nature at its best! This dessert is perfect for a summer night in, relaxing on the front porch or to bring to your next outdoor gathering. Just don't forget the ice cream!"
Ingredients
For the filling:
3 lbs ripe peaches, sliced (approximately 6-8 peaches)
1.5 cups fresh blackberries
2 tablespoons cornstarch
1 teaspoon pure vanilla extract
3/4 cup raw sugar
1/4 teaspoon ground nutmeg
For the topping:
1 cup all-purpose flour
1/2 cup raw sugar
1/8 teaspoon ground nutmeg
1 teaspoon baking powder
1/4 teaspoon salt
1/2 cup unsalted butter, cold & cubed
1/4 cup plain kefir or yogurt
1 teaspoon pure vanilla extract
powdered sugar, for serving
vanilla ice cream, for serving
Directions
For the filling:
preheat the oven to 375 degrees.
in a large mixing bowl toss together the peaches, blackberries, cornstarch, vanilla, sugar and nutmeg until combined.
place mixture into a 9 by 12 inch baking dish and set aside until ready to use.
For the topping:
in a separate mixing bowl sift the flour, sugar, nutmeg, baking powder and salt.
using your hands, work in the butter until mixture resembles a crumb like texture.
add the kefir & vanilla. mix until just combined.
top filling with mixture & transfer to oven.
bake for 45 minutes, until the fruit filling begins to bubble & the top is golden brown.
remove from oven & let cool slightly before serving.
when ready to serve dust with powdered sugar & top with vanilla ice cream.
